Whether the final product is garlic paste, garlic flakes, or garlic powder, the preliminary processing steps for garlic remain largely consistent. These primarily include:

1. Separating Cloves

Freshly harvested garlic first undergoes clove separation. Garlic clove separators efficiently break whole bulbs into individual cloves without damaging them.

2. Peeling

Garlic peelers use compressed air to instantly remove the outer skin without damaging the cloves' integrity, effectively preserving freshness.

3. Washing

After peeling, surfaces may retain traces of skin, dust, or soil, requiring thorough removal via washing machines.

 

After completing the basic processing, garlic undergoes different stages of deep processing based on product positioning and market demand. Common finished product types include garlic paste, garlic flakes, garlic powder, etc.

1. Garlic Paste Processing

Grinding and Pureeing: Garlic is processed through a garlic puree machine to achieve a smooth, paste-like consistency.

Blending and Sterilization: Depending on intended use, ingredients such as salt and vegetable oil may be added to the paste to extend shelf life and maintain color. The mixture is then sterilized to prevent microbial growth.

2. Garlic Slice Processing Flow

Slicing: Sliced into uniform thin slices using a slicer, typically with a thickness controlled between 1.5–3 millimeters.

Drying: Sliced garlic undergoes dehydration treatment. Drying temperature is generally maintained at 55–65°C for approximately 6–10 hours to ensure natural color and pure flavor.

3. Garlic Powder Processing Flow

Garlic powder production typically uses dehydrated garlic slices as raw material. After rigorous drying, moisture content is controlled below 5%. The slices are then ground into fine powder using a pulverizer, with particle size generally controlled at 80-120 mesh. The ground garlic powder undergoes screening to remove coarse particles, ensuring uniform garlic particle size.
