2. Grading: The size grader sorts the garlic by size, and the garlic cloves with a size below the standard value will be removed.

3. Slicing: The garlic is cut into slices of uniform thickness (usually 1-3 mm).

4. Dehydration: The moisture content of garlic flakes is usually less than 8%, which helps the garlic flakes to be stored for a long time. The dryer can remove the moisture from the garlic and make the garlic dry.

5. Color grading: Garlic flakes are graded according to color. Black and brown garlic flakes will be removed, and the color of the garlic flakes needs to be kept consistent.

6. Metal detection: The purpose of this step is to screen out possible metal particles to ensure food safety.

7. Packaging: After the garlic is dehydrated, it is usually packaged in bags or jars and stored in a cool and dry place. The shelf life can be up to 1 year, which is much longer than the shelf life of fresh garlic.

Precautions for Garlic Flakes Production:

1. Raw material management: strictly control the quality of garlic to prevent moldy and diseased garlic from entering the production line.

2. Sanitary control: the garlic flakes production line needs to be cleaned and disinfected regularly, and the workshop should meet food-grade cleanliness standards.

3. Slice thickness control: different thicknesses will lead to uneven drying, affecting the flavor and shelf life of the product.

4. Drying temperature control: too high a temperature will cause the garlic flakes to change color or burn. It is recommended to control the temperature between 55 and 65°C.

5. Anti-oxidation treatment: blanching or antioxidant treatment can be used to prevent garlic flakes from changing color.
